Agh! Guests are due in a day or more and you want something easy with the WOW factor. So, what’s easier than jazzing up your drinks with a recipe that can be made a day or more ahead and tastes great too?

.. and what could be more simple, and stunning than frozen fruits suspended in ice? (or in this case, the beverage of your choice?)

I get my frozen summer fruits from AH, probably the most well known Dutch supermarket and after some experimentation, find that a while range of beverages can be used as the liquid ingredient. I also add fresh mint with my fruit.

Mineral water works well, as does Bitter Lemon, and the recommended grape juice. I also discovered that if your chosen beverage is carbonated, then likely as not it will turn the colour of your fruits, so a little speed during assembly is essential. That said, it take only minutes to assemble and your freezer does the rest of the hard work for you.  Fabulous or what?

Personally, I used mini-muffin pans to make bigger ice cubes  and then served my drinks in balloon style glasses, or I  just tip a load of the fruity ice-cubes into a large punch bowl.  Either way it’s a hit.

As a member of the Recipezaar community (now called Food.Com) I made this for the first time and reviewed it ages ago. Recently I used the photo to illustrate one of my posts, was then asked for the recipe and since your wish is my command …here it is.

The recipe was submitted by  hubby and wife team who go by the member name of  “2Bleu”  and I’m sure that if you try it, they would appreciate your review. The yield depends entirely on how big your ice-cube trays  and frozen fruits are (I got a dozen mini muffin pan sized ones)

Crystal Clear Punch With Fruit Cubes
Serves: 12-36

4 cups frozen fruit
2 (24 ounce) bottles white grape juice, well chilled
1 liter ginger ale well chilled

While fruit is still frozen, dice into small pieces.
Work carefully yet quickly to keep fruit in a frozen state.
Place a few bits of frozen fruit bits into each of the ice molds/trays. Pour enough chilled white grape juice to fill trays. Pour into mini muffin tins or ice trays and freeze solid.
Once fully frozen, place in a large Ziploc bag until needed.
When ready to serve, mix remaining bottle of white grape juice and ginger ale into a punch bowl.
Add frozen fruit cubes and serve.
